I worry about these two. Each has a Saturn to the other's Mars though I'm not sure how to rate the strength of each. We, of course, want them to be great friends, but I know that doesn't always happen. I would really appreciate some comments on their synastry as I don't have a lot of experience with how these interactions actually play out.

I think outweighing many things in these charts is that, born three years apart, they both fall in the same 1/144th of the population that has Sun in Capricorn and Moon in Taurus!
This could be quite confusing. In some ways it makes them like twins, and I'd expect a kind of closeness similar to what twins have.
Eve is surely the more dominant. Besides being three years older, she has Sun on MC square Saturn on WP + Moon closely trine Mars. Ellie no push-over with Mars closely rising, though Venus and Mars together give her grace and charm as well.
See this month's Moon in Taurus discussion. Everybody pretty much agrees that Taurus Moons can be kinda whack sometimes, and I think this is more true when they become teenage girls than not. (I think it's because they feel things strongly and are powerfully moved and driven by their feelings.) You'll have your hands full, but likely not in a bad way.
Speaking of teenage years, I hope that both of the parents of these girls are, uh, really open-minded about sex. And, while maintaining appropriate safety and discipline, there are few things you could do to push them into intensive rebellion than be highly controlling.
Now, for their charts together besides the luminary similarity: It's not just signs, it's degrees. Their Suns are conjunct and their Moons conjunct. (Same remarks as above). I'm not too worried about the Mars-Saturn interchanges: The sesqui-square one way is close but minor compared to other things, and I wouldn't pay any serious attention to the sextile going the other direction.
An interesting paradox: Eve has the more dominant chart, but Ellie has her Sun on Eve's MC. I'm not going to over-interpret that, but it does give her one avenue to domiance.
The comparison is good overall, with the umbrella effect of those luminary alignments. The other main aspects are Ellie Mars to Eve's Uranus, and a Mercury-Mars (moderate-orbed) square. These are volatile, but I think not outside the range of normal sibling relations.
M only concern is Ellie's Saturn partile opposie Eve's Saturn. That seems harsh. There will be some hurt feelings from that. It may indicate some severity that needs parental attention and moderation. I guess just keep an eye out for it.

I can only hope we're appropriate with it. I don't think I've personally ever heard my own parents speak the word "sex" (old school Baptists), but my wife and I are way more open-minded and straightforward about it.

Yes, the Cap Sun is sufficient for "acting like goats," and the Taurus Moon stirs the Eros more.
