I'd like to get into other aspects of my oldest daughter's chart later, but right now, I'm looking at her Saturn placement.
Here in the Beaumont area, where we currently live, her natal Saturn is tightly on her West Point.
My wife wants to eventually move to Durango, Colorado, where Saturn will hug Eve's Descendant.
Is this essentially the same thing? I mean, is the place where we may eventually move no worse for her than where we currently live?
I just hate Saturn on those angles for her because I'm afraid it means people will be sucky to her.

Yes, it's essentially the same thing. Probably not noticed as a significant shift.
If anything is felt from that, it would be that her Sun is no longer on MC. I don't expect a strong shift from that because you never lose what's in your natal to begin with, but I'm trying to mention everything that might be relevant.
On the other hand, she might have sharper focus and a sense of keener direction, and less sense of vulnerability: One thing I have noticed people losing in a relocation are mundane aspects in the natal chart. These may be too subtle to show in a basic reading of a nativity, but one tends to notice "what is lost, what is gained" in relocation. With this move, she loses a close mundane Moon-Neptune square.
I don't think she'd lose the Sun focus - especially because her solar returns for the new location are starting to feature Sun on the angles.

Christy and I both have been noticing Eve's sensitivity separately.
She has the following indicators in her natal chart:
Neptune square Asc., 0°47'
Mercury conjunct Neptune, 1°55'
I also note the very public house-placement of her Neptune.
She's very sensitive to what other kids say and do at school. Christy's instinct is to try to get her to be less sensitive, but she knows that won't really work. So we're trying to figure out the healthiest ways to help Eve adapt instead of attempting to change her.
Any thoughts or suggestions?

I agree trying to get her not to be so sensitive is not workable, and just likely to make her ashamed of having feelings she can't help.
Try to identify specifics you'd like to help her change. Does she catastrophize? Help her identify what outcomes are realistic and what aren't. Is she highly empathetic toward her friends or animals or people in Palestine? Teach her strageties like the "put your own mask on first, then you can help others" type of self-care.
A lot of people find sympathizing turns into a spiral. If you can help her find thing she can actually do to help, she'll feel powerful instead of powerless, and she might actually do some good. I don't know if she's a doer as well as a feeler, but it would help her if she can become one. Look at what she does, and how you can help her do that while integrating it into the rest of her life.

Jupe gave you the important stuff. I'll add a couple of astrological remarks.
I agree with the Neptune observations you made. I'd add that you might consider her Taurus Moon a bit more. (Your description of her sounds a lot like a Pisces-Taurus niece of mine.) Tender and vulnerable (which often means touchy and moody), Taurus Moons are driven most by how they feel about things - they follow their hearts. While they are quite capable of assessing facts, they don't place much importance on facts when they have strong feelings about something. I've seen them get quite agitated (or worse) when people someone tries to reason them out of how they feel - they just can't place the same kind of meaning or value on facts, at least until someone gives full, complete listening to how they feel and what those feelings mean to them.
Additionally, she has close aspects of malefics to both luminaries which, at this age, especially signify parents. Dad gets the worst of it, with Saturn square that Capricorn Sun right on angles, but I'd guess that Mom is in line to get her anger. - The good news is that she'll likely grow up ready to take on the world.
